Thursday Garden Gobbles, on Friday

I have been wanting to link up to the VeggieGobblers Thursday garden gobbles for a few weeks now, but I keep forgetting to take pictures of what I cook. But yesterday I remembered!

I got this recipe from Two Men and a Little Farm quite a while back and I have been using it constantly. It is Delicious!! My absolute favourite way to cook Brinjal

 Nice size picked and ready to cook
Slice brinjal and spread a layer of mayonnaise over each slice. Dip the mayo side into some grated Parmesan cheese and place onto an oven baking tray. I bake them at 180 degrees for about 15 mins or until they are soft and browning on top

 YUM!!

  1. Wow I would never have thought of cooking with mayonnaise. I must try this... if I manage a big enough crop of eggplant (that's what I call them). So far I've only grown two skinny white ones (I think they were 'casper' variety). My friend gave me some from her excess crop last week and I made the mistake of frying them - but with too much oil and I hadn't salted and squeezed them so they were sucking the oil up and made me feel a little ill afterwards. Yours look much healthier.

  2. I also thought the mayo was a bit strange at first, but I tried it anyway and it worked well. Just a thin layer so the cheese sticks. Luckily I have had a good crop this year.

  3. I'm gonna try that! I'm pinning it as we speak! I usually don't know how to cook eggplant, so this is a good easy recipe.
