Easy Coffee Biscuits

 My husband is a coffee addict. Seriously! He even won a "coffee addict" competition on facebook to prove it. So when I asked him what he would like me to bake, I should have guessed the answer would be coffee biscuits.
I tried a few recipes before deciding that this is my favorite so far. Its so quick, uses only 4 ingredients and makes the most divine soft  biscuits.

What you will need:
 200g butter or margarine
100g brown sugar
100ml strong brewed coffee
240g flour

Cream together butter and sugar until light and fluffy. Its best to use an electric beater for this.

When creamed, slowly add the cooled coffee a bit at a time. It might look like it doesn't want to mix in but just keep going, it will come together


Use a spoon to mix in the flour, it mixes in very easily. You will end up with a sticky (and tasty) dough mix.

Plop teaspoon size blobs onto a greased or wax paper lined baking tray and bake for about 12 minutes at 180 degrees Celsius or until golden

Yummy, soft and crumbly coffee biscuits, so simple!

  1. These look awesome. I am another coffee addict - I get through at least 10 cups a day and refuse to speak to anyone before my second cup is drained. Very bad habit, but really hard to quit!

  3. Oh my hubby is a complete coffee addict - the only reason he doesn't just eat coffee beans is because they make his heart race and the doc said no lol Otherwise he would live on the stuff! Have come over from Mrs A's to say hi and I think I will copy out your recipe to treat the hubby on his birthday, thank you for sharing.
